Homemade Vegan Peanut Butter Cups

If you are searching for an easy, tasty and healthier treat, look no further. These no-bake Peanut Butter Cups are it. The light and moist peanut butter center is enveloped with homemade chocolate that has zero added sugar. Basically, these cups are the bomb.

 

I seem to always crave chocolate after I eat a healthy meal (go figure right?). So, I developed this super easy recipe to indulge in guilt free. Making your own treats is way better than the super-processed store bought junk, in terms of health and flavor. Make these Vegan Peanut Butter Cups and see for yourself!

Homemade Vegan Peanut Butter Cups

Ingredients
  • ⅓ cup Peanut Butter
  • 3 tablespoons Flour
  • 1 tablespoon Maple Syrup
  • ½ cup Coconut Oil
  • 1 tablespoon Cocoa Powder
Instructions
  1. Line a muffin tin with paper muffin holders.
  2. In a microwave safe bowl, melt the coconut oil in 20 second intervals until completely melted.
  3. Add the cocoa powder and combine.
  4. To each muffin holder, add about 1 teaspoon of the chocolate mixture and place in the freezer for 5 minutes.
  5. While the chocolate hardens in the freezer, combine the peanut butter, flour and maple syrup in a separate bowl.
  6. Add the desired amount of the peanut butter mixture to each muffin holder after the chocolate has hardened, and cover with the remaining chocolate mixture.
  7. Place the muffin tin in the freezer for 10 minutes, or until chocolate has hardened.
Notes
Note: the ingredients listed are proportions for each mixture. You may have to make more of either mixture depending on your proportions in your cups!

      You should definitely try this recipe! The chocolate that envelops the peanut butter centre is only coconut oil and cocoa powder – I think you would like it because it’s not overpowering.
